Tasty Chena Payas

Introduction   : Chena Payas is a desert in which small Chena balls are dipped in Thick creamy Kesar Milk  Ingrediants :  Milk - 1.5 litre , Sugar - 300gm , Chopped Dry fruits,  Cardamom powder 1/4 teaspoon , Leamon juice 2 tablespoon mixed with fourspoon of water , 5-6 threads of kesar soaked in two tablespoons lukewarm milk .  Preparation method : Boil 1 litr milk , Turn off the flame , add leamon juice in it and stir continuously until it Chena separates out wrinse the Chena twice with water , So the soarness of leamon is removed . Hang the Chena in a thin cotton clothe for 1 hour , so that it becomes dry . Now mash the chena with your palm for 8-10 minutes . so the dough becomes very smooth . make 20-25 small chena balls from it . Heat 250 gm ( 1 cup) sugar  with 4 cup water and stir continuously after boiling for 3-4 minutes  , add chena balls in it . Again cook it for ~15min then takeout the chena balls from sugar syrup and fip it in ice cold water for ~20 min.

                     Fruity Shahi Tukda      Introduction :  It is a Classic Indian Royal Desert  Ingredients :  White Bread - 8pcs  , Milk - full creame 1/2 litre  , Sugar - 150 gm , Ghee , Cardamom powder 1/4 Teaspoon , Chopped fruits and dry fruits for decoration  Method :  Cut out round shaped bread peices with the help of a bowl or a glass , Keep aside the outcovering of bread . Then shallow fry the bread peices in Hot Ghee until it turns light brown . Make sugar syrup by heating 150 gm sugar with 1.5 cup water boil it for ~5min with continuous stirring. Arrange  the fried bread peices in big bowl and pour the Hot sugar syrup on it sprinkle the cardomom powder and keep aside . Now , start boiling the milk until it remains  1/3 rd . Add 2 tbsp sugar in the milk and cook it for ~2 mins, add chopped dry fuits on the milk then pour this on  Sugar syrup soaked bread garnish , Keep it in fridge for 2 hours . Plating :  Garnish  Shahi Tukda with Chopped
