Tasty Chena Payas

Introduction :
Chena Payas is a desert in which small Chena balls are dipped in Thick creamy Kesar Milk 

Ingrediants : 
Milk - 1.5 litre , Sugar - 300gm , Chopped Dry fruits,  Cardamom powder 1/4 teaspoon , Leamon juice 2 tablespoon mixed with fourspoon of water , 5-6 threads of kesar soaked in two tablespoons lukewarm milk . 

Preparation method :

Boil 1 litr milk , Turn off the flame , add leamon juice in it and stir continuously until it Chena separates out wrinse the Chena twice with water , So the soarness of leamon is removed . Hang the Chena in a thin cotton clothe for 1 hour , so that it becomes dry . Now mash the chena with your palm for 8-10 minutes . so the dough becomes very smooth . make 20-25 small chena balls from it . Heat 250 gm ( 1 cup) sugar  with 4 cup water and stir continuously after boiling for 3-4 minutes 
, add chena balls in it . Again cook it for ~15min
then takeout the chena balls from sugar syrup and fip it in ice cold water for ~20 min. 
    
                                                 Now, heat 1/2 litre milk in medium flame for ~5-7 min , so it becomes little thick  , add 3-4 tbsp sugar in it (50gm) . Turn of the flame after 2 mins . add cardamom powder , soaked kesar milk and dry fruits in it . 

                                        Now , take out the chena balls from coldwater and dip in this little thick milk.  Keep this in fridge for 4-5 hours 

Plating : 

Garnish it with chopped almond , Pistachio,   Cashew nuts and enjoy 😃
